Ed-Mar Dairy & Ed-Mar Cheese

Ed-Mar Dairy Farm is owned and operated by Eddie and Marcy Gibson. The farm is located in Walton on 130 acres previously owned by Marcy’s grandparents. The herd of 55 cows produces about 600 gallons of milk each day. The milk is sold or used to make Ed-Mar Dairy's cheeses.

Ed-Mar Dairy was the first Kentucky dairy to use a robotic milker, which allows the cows to be milked as much as they want.
